SC - Mustard and tainted meat

     Meat that has reached the end of its "shelf life" can indeed be strong 
     tasting before it is "spoiled" biologically.  Even fresh meat can 
     taste "gamey," however, depending on the species, the manner of the 
     taking, and the manner of the care of the flesh.
     
     I recall the first bear I ate (1970--and no, I didn't eat it all by 
     myself).  We were in a refrigerator-free camp in the Alaskan interior, 
     and began with fresh bear steaks and chops, then stews and (mock) 
     Stroganoffs, and finally, when the meat was nearly at "that" point, 
     had to finish up with chili.
     
     Of course, then we run into the cheese torta problem, if we try to 
     reproduce the effect in period.  ;-)
