Verjuice is a sour juice used as a seasoning, pretty much throughout
Europe in period. It is made from fruits or other vegetable matter high
in acid, which is then fermented to convert any remaining sugars to
acid. As stated earlier, it can be made from crab apples, unripe green
grapes, green wheat, and various green herbs such as sorrel.

Cider or white wine vinegars make a reasonably good substitute for
agresto, a form of verjuice made from green grapes available
commercially today.
