Any good baking store, or baking supply catalog.  Around here you can get it
from Kitchen Etcetera.  (http://www.kitchenetc.com)

Oh.  A secondary source that cannot accurately define period gingerbread.

I'd like to dig deeper. Did she footnote anything on those pages?  It could
be true, but versimilitude would help.
