Derdriu asks about spice combinations.  I suspect that they are very time-
and-place sensitive.  Two common ones for England (13-15th C) are ginger
and sugar, and cinnamon/ginger/mace/cloves.

As for herbs, the most common ones in the same English corpus are parsley
and sage, with mint and hyssup close behind.  There are many, many, many
further herbs.
