SC - Poison Potatoes (semi-silly)

Semi-serious:  *is* there any edible use for potato sprouts?  I don't eat
potatoes often, but this winter succumbed and bought a sack.  I stored
them in a cold, dark cupboard.  And forgot them.  Spring has sprung, and
if I had a 'lower forty', I'd be in the potato farm business.  On a whim,
I stuck 2 sprouts and several cantaloupe seeds in a pot of dirt.  Despite
my 'plague thumb', they are growing merrily towards the door, searching
for a field.
