Hi, Katerine again, responding to Lillian.

There's nothing in the world wrong with cooking from sources like that, if
your intent is to feed people good food.  What it's less useful for, is
specific research into food of the period, since one doesn't have the
tools for follow-up.  As you point out, he wasn't writing for that audience.
I just wish he'd stuck in a small note somewhere -- like a page in the back,
giving precise sources for recipes.  *sigh*
