You silly knight, you!  The booksellers take your breath away at Pennsic.
There are usually quite a few.  My Pennsic XXV booklet lists 31
booksellers.  Some are new books, some second-hand, or a combination. 
Many merchants have a used book or four sitting in the booth waiting to
be found.  Almost every book I've got on period cookery and
recipes--except the German ones--were purchased at Pennsic.  You can find
the commercially published books, such as those from Scully, as well as
the SCA specific ones, such as Duke Sir Cariadoc's volumes and Falconwood
Press reprints.  


As for spices, yes there are spice merchants, and for herbs that can be
grown in the USA it can be a good source, but for imported spices you may
do better to mail order from Tony Hill at hill at worldspice.com, or the New
York sources Adamantius has posted.


Sometimes, you get two for the price of one:  at The Magic Badger, Miriam
sells you herbs and herb books, and Badger sells you spits, fire dogs,
etc. all the stuff a top blacksmith makes. 


Take large plastic zip lock bags to double bag your purchases--even in
the car trunk--in case of rain.  It will rain and the puddle in the tent
will form under, around and through your best purchases.  (You probably
know this, but we have new folks on the list, too)
