Sure. Ideally, there won't be enough of the fat left on the fritter to
give it a distinguishable flavor anyway. I would avoid corn oil, though,
because it can get a slightly rancid flavor sitting on the supermarket
shelf. Something like sunflower oil, or safflower, peanut, or canola
would be fine.
