You apparently still can, but you may have to develop a working relationship
with a butcher other than those at your local chain supermarket. Adamantius
gave a good summary in a recent message here on marrow. However, that
message will make a lot more sense if you take a look at another message
he wrote a little while ago. This message is now available in this article
