And a fine job it is, too!

Smith's books often seem to have this problem. I suspect he is actually
a committee, and not a real person at all. His agents work for him in a
manner akin to those of The Shadow or The Scarlet Pimpernel: The League
of the Frugal Gourmet. Maybe he's more like The Dread Pirate Roberts
from William Goldman's "The Princess Bride": when he retires or dies,
Craig (Wollam?) will get to be The Frugal Gourmet...that beard could be
hiding just about any facial features.

Anyway, I figure your egg and butter quantities are just about right.
You could get away with a bit more butter if you wanted to, but it would
change the texture slightly, so you may not want to. All in all, you
made an excellent call, and given Smith's other bread recipes in the
same book, probably exactly what he would have specified if he (or his
editor) had thought of it.
