Here's the recipe. OOP but beloved of the sweet-toothed guncher.
Danish Apple Pie
Recipe By :

Amount Measure Ingredient -- Preparation Method

1 egg
3/4 cup sugar
1 teaspoon vanilla
1/4 teaspoon salt
1 teaspoon baking powder
1/2 cup flour
1/2 cup nuts, chopped
1 cup apple, diced
Mix ingredients in the order given.
Pour into 8 inch greased round cake or pie pan.
Bake at 350 degrees F for 30 minutes or until the top solidifies. Can
be tested with cake tester.

NOTES : Out of period, but tasty. I suspect the recipe may have an
origin similar to gingerbread, but have no proof either way.
For feasts, I replace the sugar with 1/2 cup honey and leave out the
nuts. One medium apple equates to a cup. The recipe expands linearly.
I bake them eight at a time. I generally serve this at the beginning of
a feast.
The vanilla can be replaced by milk of almonds and a second egg can
replace the baking soda for leavening. The results are a thinner and
denser cake.
