Okay. So I followed Alys Katherine's advice and went out and got some
candy books out of the library. I found a recipe for "Apple Candy" (Apple
mush, sugar. lemon juice and unflavored gelaton) in one of them. It is
very similar to several recipes in one of my new books - one of the John
Murrell books, I think. Anyway, I decided to try it to see if anyone
liked it before trying the more period recipe. The candy is delicious,
but it is very sticky. The recipe called for rolling it in confectioner's
sugar, which only made it worse *and* it's not period! I'm thinking about
trying the period recipes, one of which basically is just cooking it for
a long time until it gels naturally, but if it gets sticky again, maybe
rolling it in granulated sugar instead. Any thoughts from someone with
more candy experience?
