Cubebs= cubeb berries. Sort of peppery tasting with a hint of allspice.
Although they are not used in modern cookery in my knowledge, they are still
used in the production of gin as are galingal and grains. Stefan has a
section in his files on period spices, I think. Maybe he would be kind enough
to post the info. :-)

The emu basting sauce and the emu itself are not period. I did attempt to do
them in a "period style".
