There are many ground meat based dishes throughout period cookery books some
of which were obviously not meant to be served hot. The various pottages,
pates and meatloaf like recipes used ground chicken, pork, veal, lamb,
livers, brains, hearts, rabbit and small birds. There are far more than I
have the capability of posting. However, some would come very close to being
like the potted type meats and cold cuts available today.
