As Aiofe can tell you, I'm a bit of a maniac about knives, to the point of keeping
a separate cased set for SCA feasts.  Those are the only knives I keep in a case,
and that has more to do with keeping them handy and together than for use.

If your kitchen is set up with a fixed prep area, a magnetic strip can work well
- - there is a particular art to putting and getting knives from a strip without dinging
their edges, tho.  Blocks work well, but take you big knives with you to get yours,
as filling a nice block with all your knives except the 10" French one that doesn't
fit( Yes, campers, I did).  

One quick digression.  I've been following this thread for a bit, and the only additional
point I'll make is about that French knife:  spend the money for a forged blade.
 Look at a top end Trident or Sabatier, hold it, then find the best similar knife
yiou can afford.  The difference in balance, handling, and performance really shows
up on those long prep sessions for large feasts.
