The green of the lettuce doeas not leach out into the stock anymore than the
orange in the carrets does. Stock is strained broth and does not contain bits
of the vegetables used in creating it.

Tip of the Day: If you set your stock in the frig overnight, you will be able
to lift the grease off in one piece, nrgating any need to skim it off.
