SC - period suerkraut?

It seems to be curiously absent from Das Buch Von Guter Spise, but I
read once that pots of some long-forgotten pickled cabbage, virtually
identical to sauerkraut, were found buried in the foundation of the
Great Wall of China, presumably left there by the building crews.
