The skate recipe sounds interesting, but I don't like sage, How about
lemon thyme and parsley?

Try this some evening-
a fillet of sole, roll into it a sprig of thyme and a thin slice of
blood orange, flour with rice flour, saute. deglaze with a touch of
grandes marnier and butter with a bit of turbinado sugar and serve on
white and wild rice with the orange sauce.
