Unto the Most Noble Lord Ras al Zib, companion of the Sycamore, etc.,
these words from Gideanus Tacitus Adamantius, Master of the Laurel,
companion of the Maunche, etc.:

HEY RAS! DON'T BE A DOOFUS!

As in the case where I was accused of calling the Mistress of my
household a wuss, please note that I am not calling you a doofus. You
are merely waylaid on the path to doofusness ; ). I am taking it upon
myself to try to put you on the correct path to safety.

Please don't feel as if your work was wasted. Surely you learned from
it. Surely you created something yummy. Surely you learned how a Roman
chef would have dealt with shellfish which, when not properly treated,
would be tough, stringy, and unpleasant, which are pitfalls common to
both mussels and scallops. Surely you set a good example to others on
this list by posting the results of your research and experimentation,
trusting in your friends on the list not to make you feel uncomfortable
if they didn't like the recipe or agree with your findings.

There's no reason to think that a well-reasoned variation on a period
recipe is inappropriate for a period feast. This is not the same as if
you had taken some kind of fish, and started playing around with
liquamen and oenegarum and sylphium without trying to learn how they
would have been used. I don't consider this a made-up or non-period
dish. Besides, you did all that you did in good faith, and we still
don't know for sure that the recipe was substantially altered by
Vehling. It may still be in there, intact. I just said I couldn't find
it.

I'm thirty-five! My eyes are falling out, my hair is dim, my ears are
bent, my back is deaf...

With your permission, I'd like to use your redaction in an Apician feast
I may do next winter. Nice foil for Tarpeian Lambmmmmmmmmm...

Adamantius
