chatty, with wonderful stories as well as marelous recipes)

                         BETE NOIRE ("Black Beast" or, idiomatically
"Nemesis")

8 oz unsweetened chocolate                  1/2 lb unsalted butter, at room
temp.
4 oz semi or bittersweet chocolate          5 extra-large eggs, at room temp
1/2 cup water                                        1 1/3 cups sugar 


     Butter a 9-inch cakepan (Not springform) and cover the bottom with a
buttered circle of parchment or waxed paper. Preheat oven to 350* F.
     Put chocolates in a food processor and chop fine. Place the sugar and
water in a small saucepan and bring to a boil. Cut the room-temp butter into
cubes. Crack eggs into a container with a spout. With the processor on, add
the still-boiling sugar syrup, then the butter one piece at a time. Add the
eggs, and process only until smooth.
     Scrape into the cake pan, and place in a larger pan. Set both in the
oven and pour hot water into the outer pan to come part way up the sides.
Bake 25-30 minutes.
     Let cool in pan for 10 minutes, then run a sharp knife around the cake
to release. Turn out onto a surface covered with pastic wrap, place a serving
plate over the top, and use the plastic to flip it right side up. Serve in
very thin slices for all but the most serious chocolate addicts.
 
     This wonderful cake has the consistency of cheesecake and gives the
feeling of eating a slice of chocolate truffle, even more so when served
still warm. Any leftovers will keep well wraped tightly and refrigerated.

     I haven't yet had the chance to serve this to royalty, but it has
brought a nearby baroness to exclaimations of delight, especially when served
with brandied raspberries........................ ;-)
     Oh, yes, and this is only considered period durring *certain* reigns!
