Leeks may not be considered a spice but usually fall 
under the onion / garlic "nerve bundle".

MSG, even from completely natural sources that 
would have been available to cooks in period,
should be either completely avoided or loudly
trumpeted as being present. 

ANYTHING served with a quantity of spicing exceeding
the normal modern palate is best served with accompanying
admonitions. Such warnings can be couched in delicate
ways to avoid "breaking the ambiance" (Server: 
"My lords and ladies, for some palates the cook may 
have been a little heavy-handed with the ginger in 
this dish.")

Anything based upon legumes or involving fermentation
(or likely to contain -- or consist of -- fungus spores).
Alright, not strictly "spices", but often used as
ingredients and should necessarily be listed at 
the event gate and in the feasthall, or otherwise
made prominently obvious. (Example for special 
consideration: head table may be receiving 
specialties not on the general menu -- discretely
inquire into food allergies *before* your Baron
has to dive for the Benadryl to avoid anaphylactic
shock from legumes...)

And particularly for larger feasts it is a good idea
to provide DIY extra salt & fine ground black pepper 
(at least on a discrete basis). (I personally have
"saved" at least one individual's feast enjoyment
by being able to supply ketchup from my personal
basket.... DON'T ask what she used it on, please!
The ketchup had been packed for use earlier in the
day, with modern fare of hotdogs & such. It still 
gives me shudders to consider the evening's use, 
and I have since quit carrying the full bottle. 
Packets, maybe, but not the bottle.)
