SC - Flavoured oils query

Greetings.

I've been lurking on the llist for awhile now, and figur that if you
good gentles can't answer my query, then it has no answer.  :)

I am a fan of Mediterranean cooking mundanely, but would like to learn
more about NW Europe, specifically the western part of the British Isles
(Ireland, Wales and Cornwall) in regards of cooking.
I love oil which has been suffused with herbs.  Have attempted to make my
own (I think I was too impatient) and use commercially produced ones a lot.

Are they period?  How early can they be documented?  How were they utilized?
How were they made (what oil, what herbs, etc.)?  Does anyone have _recipes_?

All right, that was more than one query...  But I am completely fascinated
by the subject and my dinners have been getting more and more interesting 
as I absorb information from this list.  I seek enlightenment O Knowledgable
