SC - bizarre roses-as-food reference

I read the following in a magazine article.  The article was about 
roses, not food, but I was baffled by the quote, which was:

	"In Damascus and Persia, people used to bury jars
	 of unopened rosebuds in the garden, and dig them
	 up on special occasions to use in cooking -- the
	 flowers would open dramatically on the plates."

			???!?!?!?


I am passionately interested due to my recently begun Master's thesis:
	"Rosa Mundi -- The Metaphor of the Rose in Medieval
        Spirituality, Music and Cookery"
