Stefan, I do not have documentation for this, *but*:
I believe that there are several possibilities
that have been used. Well-washed (and dried) river
pebbles may have been an early form of this. I vaguely
recall a more modern form in which the "beans" are
actually unglazed but no more than semi-porous ceramic.
Heated in advance, such stones would also have been
used to assist in cooking meat or fowl from the inside.
("Polynesian-style" pig roasting would be a parallel.)
I eagerly await hearing more definitive / learned
information.
