How WONDERFUL! My folks have a fig tree, but I still can never get
enough. Try the jam idea, it's dead easy. Cook the figs with sugar to taste
and perhaps a bit of lemon juice until they are translucent and broken down
(Stirring helps.) Then put the jam in jars, leaving headroom, and freeze it!
That way you avoid the whole canning procedure and don't have to sweeten the
figs as much. Or use the cooked pulp to make homemade fig bars........
Of course, with that many figs, you might want to try drying them. Use
your oven on the lowest setting if you don't have a dehydrator. The figs
might need to be sliced in half to dry before molding, at least in a
dehydrator without a fan like mine. (Discovered that a couple of years ago
with tomatoes, but the theory is the same.)
There are tons of things you could try. How about a pie of figs, maybe
mixed with apples? A tart with a custard bottom and figs set on top, drizzled
with caramel? Fig bread! Freeze small loaves for Holiday presents--and send
one to me! ;-) A fig chutney to serve with ham, etc.?
