I spoke with two different people about a butchering class.  The upshot 
is that no live animal can be killed on the site, nor can any real 
dismemberment occur.  There is no good way to dispose of the blood, 
entrails, etc.  (Unless you know of a guaranteed sanitary way that the 
Coopers might go for!) That would seem to preclude any actual 
butchering of a carcass unless the thing had been drained of blood and 
gutted (says she, not really knowing how an animal has to be cut up).  
I would think that if there was no bloody drainage, that if it were 
cutting up a "clean" carcass, that this type of class could occur.  It 
wouldn't be much different than cutting up a hunk of beef to make stew, 
for example.  Does this help clarify matters?
