With a little gardening know-how and a place to put a 5 gallon container or
two outside some of these plants could be grown on a small scale allowing a
person to invite over a couple of people for an authentic medieval dish
 occasionally. :-)

Sure! And last year, when I had gourds coming out my ears (though not
quite in the quanities needed for my "gourd" dish for the Roman feast :-( ),
I took a bunch of the monsters (Over a yard long!) to the event to give away.
Got a number of interesting comments back, too. But those beasts took over a
large chunk of the garden at my folks house--not well behaved at all! I'll
have to think hard before growing *them* again............ ;-) And yes, I've
got some white carrot seed--just have to find time next spring to plant it!
