  In the East the fencing title/award is Don (i.e. Don Dylan)
  and is signified by wearing a gold cord.

Sigh.  Not the case.

The rise of fencing in Atenveldt and Ansteorra also gave rise to the notion
of the Order of the White Scarf, a pan-kingdom set of orders whose reglia is
the white scarf (obviously) and whose self-endowed title is the term "Don".

The East has its own (unique) Kingdom Order, known as the Order of the
Golden Rapier (or OGRe...).  It's holders have (by custom and sometime
inter-kingdom treaty, feh, politics) have equivalency with the White
Scarves.  The symbol is a tyger's head eating a sword.... aka "The Kitty
Kebab".

The East didn't used to have a Kingdom Award, and the fencers created (for
themselves) an internal ranking system, with the highest level being known
as a Don of Fence, and who wore the gold cord.  Many (but not all) of the
Gold Cord wearers have become members of the OGR.  And some of the members
of the OGR have never been Gold Cords.  The title Don has, by custom, become
the custody of the membres of the OGR, in the East.

Do note that anyone in the Society with an AoA is permitted to use the term
Don to describe themselves... although custom is more powerful than law most
of the time.  Unless you have a spanish persona, perhaps it would be best to
avoid confusion.

   (Silverwings Laws 43: "The SCA is pretty lax at enforcing its
   regulations, and cannot do more than slap on the wrist. But becoming
   a social outcast makes the game no fun. The penalty for violations
   of custom, while less precise, are fiercer.")

                                            There is also a local Baronial
  Fencing Academy here, but I think that's because fencing is a lot more
  popular in the Delaware Valley than elsewhere in the East (i could be
  wrong, but it does seem that way)

You may be wrong... the Carolingian Academy of Defense (and its former
members) are among some of the most influential fencers in the East and
AEthelmearc.  Consider that Carolingians, or former Carolingians, have been
the last 3 consecutive Kingdom Marshals of Fence.... (Gwynydd, Seosamh and
Ailis).  I wouldn't ever underestimate the Northguard, nor the fencers of
Dragonship Haven, Dona Ailis (the Kingdom Fence Marshal) runs a very solid
academy in New Jersey, and former Easterners in AEthelmearc also run quite a
few.
