There is such a wealth of good material in Ann Hagen's 2 volumes
_Handbook of Anglo-Saxon Food and Drink_, 1. Processing and Consumption
and 2. Production and Distribution.  These aren't cookbooks, but there's
lots of valuable information which could make for good discussions on how
we'd produce an Anglo-Saxon type meal, using these guidelines of
availability, etc.

She cites a lot of additional sources from which she documented her
material, which may lead to further researches on the instructor's part,
if these resources are available.
