A rasher of bacon is a thin slice.  Beware British recipes:  They use "bacon"
to describe ham, picnic butts, and shoulders, too.  

As to game birds:  Your average wild grouse or pheasant dresses out to about
two and a half pounds.  A small one would be about a pound.  Determine the
individual weight of your Cornish hens and use accordingly.  

By the by, the reason the recipe calls for the bacon is to add fat to wild
birds which are usually quite lean.  If using commercially-grown game hens,
you may want to dispense with the bacon if you're watching your fat intake.
