The risk is that a very tiny portion of eggs can have the salmonella germ in
them.  Tiny risks apparently throw some people into safety overdrive for
assorted reasons.  The odds of coming across such an egg are not really
something to be all that cautious about once they reach the market because
salmonella outbreaks are dealt with rather swiftly and forcefully by the
"authorities." 

(On a side note, is rather good advise to wash chicken thoroughly before use
and all utensils and vessels raw chicken has contacted because an estimated
[e.g., by the government.for what that's worth) that 1 in 4 chickens have some
of this germ in or on them.)  Surprisingly, this estimate appears to be low to
me given the fact that salmonella is one of the germs naturally occurring in
chickens.
