SC - vegetable side dishes

Hi all from Anne-Marie
I could do with some help brainstorming here. I'm in charge of the food for
our little group at May Crown. I am looking for documentably period
vegetable dishes from the 13th-15th century Europe to go with dinner of
bukkenade.
Ideas?
So far we've thought of a compound salat, cretonnee (which would involve
precooking, most likely), benes yfryed (mmmm....fava.....) or maybe funges
(mushrooms stewed in broth with leeks and spices).
We're cooking over a fire, so fussy dishes need not apply.
Lets see what you come up with!
