SC - Eggs "Born On Date"

I was taught to test eggs by putting them in a glass of water, small
side up.  If the egg sinks, it's fresh.  If it slowly rises to the
surface, it's getting old but still OK.  If it shoots to the surface
and/or flips so the small side is down, don't eat it.

Has anyone else heard of this egg test?  Or know why it  works or
doesn't work?
