Lamingtons are the traditional fundraising cake of Australia.  Get a
gigantic rectacular sponge cake.  Cut into cubes.  Roll the cubes in
chocolate then in coconut.  Sometimes you can get them with cream in the
middle but not so often anymore.   They are pretty yummy generally; all
the things you could love, chocolate, coconut, cake....

They freeze beautifully and are usually sold by the dozen (my mum used
to by 6 dozen and freeze 5) by school children trying to raise money for
some thing or other.
