SC - unusual cooking methods?

I've also heard of doing this with skin bags.
Also have seen some of the locals here in the Desert Southwest cook by
building a fire on a rocky outcrop, and keep moving the fire over and cooking
on the thus exposed hot rock.  Especially good for fresh caught fish.
