Asuming the bubbles were the result of yest fermentation that statement is
still true when applied to the correct situation. that is the brewing of
wines, beers, ales, and other fermented beverages/food products. 

The small amount of alcohol present from ferments in the pork kettle would
bear no resemblance to those produced during a wine/alcoholic beverage
process. There are many other beasties which produce 'bubbles' as a side
effect of digestion without alcohol production (e.g. the bacteria that
produces vinegar). None of them growing in pork would tempt  the gourmet in
me. :-) Some of them are deadly!

Ras ( who feels that somehow he was drawn into this.....hmmmmm.)
