Hmmm... I don't have an explanation, but I can give you an interesting side story.

Years ago I was visiting with some family in central California.  They were farmers, and had been all their lives.  They were involved with something called the "heifer project," which (perhaps someone else can explain this better than I can?) has something to do with sending young, breedable farm animals (i.e., heifers and hens) to foreign countries to help alleviate food-shortage problems.  

After the project had really taken off in one particular small Asian country,  the couple went there on vacation.  They tell me that every meal they were served in every home they visited was accompanied by fried eggs, usually served on top of whatever dish it was.  :-)   At the end of the visit they went to a restaurant and ordered their dinner, "without eggs."  Of course, the eggs were hidden underneath...  <g>

Don't know how much of this is true and it's all second-hand anyway, and probably has nothing to do with good old-fashioned Napoli pizza.  But it's a great story.  :-)
