Check out the kitchen as soon as possible.  Know what pots, pans, mixing
bowls, electric gadgets and all the cooking stuff you will have access
to, and what you'll have to bring.  For the things you bring, get some
good firm colored tape, in the hardware store, and put a piece on each
item.  Helps to know what's yours at the end of a long, frazzled day and
night.  Look for 'work stations' you can set up:  Tape up a copy of the
recipe that will be prepared there, with a list at bottom of it detailing
items: 9 x 13 pans (4), large slotted spoon, bread knife, cutting board,
etc.  Serve into xxx dishes, with large serving spoons.  That sort of
thing.  Keep an extra copy in a notebook in case it falls off the wall
into the goop.  


Basically, you are going for complete, pre-planned, knowledge of what you
and others will do and what and where you are going to do it.  When you
have a firm hold on that, it will increase your sense of control and
confidence.  Also, sit down with the bride and groom--and possibly a
mother or two--and let them know just what you are going to do.  They
need to know abilities, and your limitations.  When it's all straight
ahead of time, there won't be any major surprises or disappointments: 
"Well, of course, being medieval I though you were going to serve a whole
roast pig..."  LOL.



For menu, what have you done before that went well?  What do you like to
cook?  What books do you have access to?  (Silly question---if you
haven't got 'em, we do)  What does the bride love and the groom hate? 
When will it be and what's in season where you are?  How much can they
afford per person?  Is it sit down, formal; sit down, casual; or stand up
and nibble?  Start with broad questions and narrow down.


Get a notebook or folder, now, and start it with printouts of posts you
get that are helpful.  Add all your notes, questions, etc.  You'll make
it!
