Rice flourentine comes to mind...rice (cooked), sauteed onions,mushrooms & green
peppers, spinach (cooked and drained),  and a bit of rosemary (removed after
sautee with veggies), pepper, salt, and cheddar cheese.  Mix and bake at 350 for
25 min.
