Great idea.  I'm bringing loaves of bread for the first few days.  

A regular camping dish that I would take to Pennsic

Cous-cous and broccoli.

Cut the as much broccoli up  as your family will eat into smallish pieces,
paring off the skin if it is woody and set it to boil in a big enough pan,
with butter added.  When it's as done as you like, guesstimate and add more
water if necessary. Add enough cous-cous to cover the broccoli, squeeze half a
lemon over it all, put the lid on and take it off the fire to steam.  (I
usually line the pan to do this, then lift the foil liner out so I can use the
pan for something else.)

My daughter misunderstood and boiled the half a lemon with the brocoli.  That
worked too, though everyone of us managed to bite down on a lemon seed.

The recipe isn't period, but the style of it is: No amounts, no times!  hee-hee
