Thorbjorn,

I think her suggestion of just replacing the ham hocks with bacon ought
to work just fine.  If it's not quite to your liking, cook the bacon part
way, and try again with fully cooked bacon until you get a pleasing
result.  In any case, cook the night before you want to eat it,
refrigerate, and then easily remove the excess fat before heating, next
day.
