HI Am,
Make sure that the pan and drippings are hot when you put the batter in.
You have to do this just before you serve the pudding as it falls quickly.
It's like dutch babies or popovers.

Mauny caseburg the radio gourmet (I forget her website address) has a piece
this week on yorkshore puddings.
