No, "lire" does not mean liver, it means flesh. We made that guess
ourselves on one recipe; we then happened across Hyatt and Butler's version
of the recipe and thought we had caught them in a mistake. Checked it out
in the Oxford English Dictionary and found out it was our mistake, not
theirs. The dish sure tasted different when we did it with pork flesh and
not pork liver.
