I missed the original posting, but there's a recipe in Out of Old Novia
Scotia by Maria Nightengale (1970) where she says(? documentation) it dates
back to the 17th century.

80 blossoms white clover            10 cups sugar
40 blossoms red clover	      3 cups water
5 rose petals (faintly perfumed)   1/2 teaspoon powdered alum

Combine sugar, water and alum and boil for 5 minutes.  Pour the syrup over
the bolssoms and rose petals and let stand for 20 minutes.  Strain through
a cheesecloth and bottle.  Store in a dry place.
