I'm not sure I've read that one, but one of my favourites is "Ariel" in
which the physical laws of the universe changes to allow magic but not
mechanics.  The SCA and the Amish are the folks who survive it best.

Another really funny one is "High Crusade", which doesn't include the
SCA, but has a rocket landing at a crusades era keep as the residents are
preparing to go on crusade.  Well, they think that these are the
"infidel", take over the ship and take the crusades to the stars.

Actually, I've seen the SCA mentioned in passing in several stories.  I
believe that at one point, David Weber mentions it in the Honor
Harrington series.  Mercedes Lackey mentions us in several of her books.

There are some others, but I can't think of them off the top of my head. 
I've also read a few others that have mentioned us--mysteries  and a
novel or two.
