As to the hiring of pros to run the spit bbq for you, make sure they are
willing to blend in a bit! About 7 years ago down in Atlantia, there was a
camping event on a navy base...the area was secluded, there was a great open
field for battles and the giant pavillion for the feast. Albeit no
electricity, but plenty of running water in a smaller screened building used
as the kitchen...and a crew of 2 or 3 rednecks who listened to country music
loud enough to here over in the kids playground and over the sounds from the
battlefield. Most unharmonious, to say the least. Not to mention the pig
provided was fatty and gristly-even at high table, they had trouble finding
cuts decent enough. Almost a full half of my serving was fatty beyond
belief.

I would almost see if they would let you provide the pig for the roast, it
might save a few hassles in the long run.
