I don't know if this will help, but I ran across a recipe for crystallized 
rose petals in my local Safeway, of all places. I don't know if it is 
period - can anyone tell me if such things were used?

The recipe calls for brushing rose petals with egg white that has been 
beaten until frothy, then dipping the petals in sugar, coating both sides. 
They are then placed on a towel to dry. If this is something that could 
have been done in period, these could conceivably be used on a solteltie to 
be served at the feast.

I can post the recipe if anyone is sufficiently interested.
