Syrup of Lemon
Andalusian p. A-74

Take lemon, after peeling its outer skin, press it and take a ratl of juice,
and add as much of sugar. Cook it until it takes the form of a syrup. Its
advantages are for the heat of bile; it cuts the thirst and binds the bowels.

See, there you go... better organized folk than I...  Actually on review, the
Joy of Cooking recipe is a smidge more complex.  I don't have it with me for
proportions, because I was bad last nite and went to dance class instead of
staying home and looking the recipe up.  But the juice of the lemons is added
to a syrup made from boiling the yellow parts of the rind in sugar water (get
rid of all the white! blech!), then strain the whole mix.  one part syrup to
3or 4 parts water makes a potent and tasty drink.
