No, unfortunatley there does not seem to be any existing manuscripts.
perhaps one will show up. There is some anecdotal evidence, however. If
anyone has newer information, please, please share it.

Sadly, current knowledge of the Irish, Scotts and Welsh "period" cuisine
seems to have suffered from a lack of information. One has to go to later
sources or anecdotal evidence. In some respects Scotts cuisine is similar to
English, however I suspect that Irish is not quite as similar, since not
even Henry the Eigth could get those unruly Irish to dress like proper
Englishemn. In fact, they managed to convert the noble lords sent over for
that purpose to THEIR way of dressing. Naturally the snooty British couldn't
have that. It seems they wanted to tell the Englishmen and Heathens apart,
and couldn't do that without different sets of clothes! Therefore, I suspect
that the cuisine was as slow to change as other traditional facets of Irish
life. Even today they hang tenaciously onto ancient customs, and are proud
of their long, long history. Even foodstuff that are not native to the
island are given a traditional twist, in order to make them acceptable. Look
at Irish Coffee (whiskey added), Irish sausage (spicing and filler added),
Irish tea (of a higher grade and with more bite), etc.  And, there's nuthin'
wrong with that!
