WOW!!!  Thank you!!  I had one (SINGLE) bite of a Scotch Egg at an event
last summer.  There was no way I could eat more than one bite because I have
gallstones and greasy foods can cause me to have a gallbladder attack.
Something I do NOT want to repeat!  Those Scotch Eggs (which my husband
enjoyed thoroughly!) were indeed boiled eggs with some bizzarre coating
packed around them, but they were deep fat fried (she apoligised for frying
them in vegetable oil, but in that heat I don't see how she could have kept
lard safe for human consumption - it was about 107 that day!) not baked.  I
think I would like to try this baked version, sounds like something that
would not be as hazzardous to my health!  My husband loved those Scotch Eggs
so much, but I told him I wouldn't make them at home because I refuse to
spend that much effort making something that I'm not allowed to eat  he
understands, but I think was a little dissapointed.  I like doing nice
things for him, and I think this will make him happy!  :)  Who knows!  Maybe
the kids will eat them too?
